Fairview Gardens Micro Kale Salad,
Shaved Asian Pears, Meyer Lemon and Truffle
Oil Dressing
Ingredients, Serves 8

1 bag Fairview
Gardens Micro Kale
á
3 Asian
pears, preferably Kosui variety
á
1/2 tsp.
minced garlic
á
1 Tbs.
minced scallions
á
1 tsp.
Dijon mustard
á
1 tsp.
Meyer lemon zest
á
2 Tbs.
Meyer lemon juice
á
3 Tbs. olive
oil
á
2 Tbs.
Truffle oil
á
2 tsp.
minced parsley
á
salt and
pepper to taste
Process
á
Wash and spin dry the micro kale, and keep
chilled
á
Peel and core the Asian pears and slice them 2
mil thick
á
Make the salad dressing: Stir together the
garlic, scallions, mustard, Meyer lemon zest and juice. Whisk in the oil. Add
salt and pepper to taste, and the parsley.

Toss the kale in the dressing.
á
Fan out a circle of Asian pear slices, and mound
kale in the center.
á
Serve.
